The Great Cookie Adventure

Molly and I thought that it would be a fun and easy undertaking to make cookies for all 155 staff members at Teach for America's Houston Institute. After about 4 hours in the tiny kitchen at Rice University using makeshift utensils from the supply room, we finally realized that maybe this wasn't such an easy task after all. Luckily, the recipe we found on pinterest was easy-squeezy. It doesn't hurt that the cookies were yummy, too.


Cool Whip Cookies

1 box cake mix (any flavor - we used red velvet and yellow cake mix)
1 container Cool Whip (8 ounce)
1 egg
1 bag powdered sugar

Mix all ingredients together. Form into golf ball sized balls and roll in powdered sugar. Bake at 350° for 7 to 10 minutes. Cool in pan before removing. Yields around 4 dozen.
